Holiday Shopping at Made South

Walking with eyes wide open at all the offerings at the Made South Holiday Festival, shoppers came by the Cooking Up tasting table ready to enjoy the Sweet Potato Hummus & Sweet Potato Bisque. Looking for home cooking simplified during this holiday season, sweet potatoes offer big nutrition with easy preparation. To keep the sweetness down, these recipes focus more on savory ingredients to balance the natural sweet of the potatoes.

Sweet Potato Bisque

2-3 medium to large sweet potatoes peeled

1-2 medium to large sweet onions chopped

several garlic cloves chopped (amount depends on level of garlic liked)

fresh garlic peeled & sliced (amount depends on level of ginger liked)

water 2-4 cups (amount depends on thickness desired)

coconut milk

olive oil

In a large soup pot, add oil at medium high heat; add ginger, garlic, & onions, & sauté until tender. Add sweet potatoes, toss to coat with oil & onion mixture; add water; bring to a boil & reduce heat to a simmer. Cook until potatoes are tender (fork slides in easily). Using an immersion blender, puree until smooth. Add coconut milk & any spice combination desired.

 

Sweet Potato Hummus

1-2 large sweet potatoes peeled, chopped & roasted (toss with olive oil, S & P, roast at 425 until fork tender, about 10-15 minutes [depending on size of chunks])

tahini ½ – 1 cup

water ½ – 1 cup

olive oil ½ – 1 cup

lemon juice to taste

garlic to taste

Place all ingredients in a blender until smooth. Place in a serving bowl & garnish with olive oil & smoked paprika or toasted nuts. Serve with crackers, cut veggies or pita bread. Hummus is a wonderful base to sandwiches. On hearty bread, add hummus & seasonal veggies and/or meats, for a nutritious & delicious meal.
